From washing to drying, from crushing to oiling through a heat exchanger that allows temperature regulation: this system allows all the steps to be programmed according to the characteristics of the olives to be crushed and the oil to be made. All this, coordinated by a management system that facilitates the interconnection of each processing and remote control.
The mill with these features, called Frantoio 4.0, is dedicated to the processing of olives from Oleificio Morettini's plants and those from the best olive groves in the area, which are carefully selected and immediately pressed, to promote a production inspired by the search for perfection of extra virgin olive oil.
The production process of mill 4.0 is divided into several stages where the combination of human experience and technology allows the best result in terms of quality and taste. A key feature of SuprEvo is the speed of the processes: the olives are pressed and picked on the same day, thus enhancing all the characteristics of the fruit and guaranteeing a total absence of defects, imperfections and deterioration.
Stages of production
Manual selection of the olives by the miller, who assesses their condition, characteristics and stage of ripeness to establish the processing standards.
Washing and cleaning away leaves, twigs and excess bodies, followed by drying.
Passage through the knife crusher which allows different types of olive paste to be obtained depending on the set speeds and times.
Entry into the heat exchanger where the temperature of the paste is regulated in order to perform cold extraction during the crushing process, which is carried out in oxygen-free containers that avoid oxidation through contact with air.
Transmission of the product into the centrifugal extractor for initial separation of the oil, which finally passes to the final separator or directly onto the filter.
